The Healing Power of Antioxidants (And a Favorite Recipe!)
Antioxidants are compounds that give fruits and vegetables their colors. They occur naturally in fruits like pomegranate, grapes, and blueberries; vegetables, such as artichokes, broccoli, and onions; green tea, and even dark chocolate.
According to the Director and Vice Chair for Research at the University of Wisconsin Medical Sciences Center – antioxidants are all equipped to trap free radicals that are notoriously harmful for our skin.
Antioxidants naturally protect plants from the strong, damaging UV rays of the sun.
Eating antioxidant-rich foods can protect your cells from free radical damage to help your body protect itself against cancer and heart disease. But these powerful compounds are also potent skin-care ingredients. When applied topically, they can help repair and rejuvenate your skin.
Not only that, but antioxidants can also REVERSE signs of aging like dark spots, fine lines, and wrinkles.
Here’s one of my antioxidant rich skin supporting recipes to help support your skin.
GRILLED SALMON WITH FRESH FRUIT CHUTNEY
2 tablespoons coconut oil
4 - 6 oz. Salmon fillet
1 mango, peeled and diced
1 small papaya, peeled and cubed
1 red plum, cut into thin wedges
1 peach, cut into thin wedges
1/2 cup white wine
1/2 lemon, juiced
1 lemon, zested
1 tablespoon raw honey
1 avocado, peeled and cubed
1/4 cup currants
2 parsley sprigs, chopped
Heat the oil in a nonstick skillet.
Add the salmon and sauté to desired doneness.
The timing will depend on the thickness of the fish.
To prepare the salsa:
Combine mango, papaya, plum, and peach.
In a small saucepan, combine white wine, with lemon juice, lemon zest and honey; bring to a rapid boil.
Turn down heat under liquid and allow to simmer for about 3 minutes.
Add fruit and cook slowly until mixture thickens and begins to resemble chutney; remove from heat.
Add the avocado, currants
Mix carefully to heat through.
Spoon the salsa over the salmon
Sprinkle with the parsley
